Introduction

TIVISKI is a small dairy in Mauritania (West Africa), that processes camel milk into modern, high-quality products.

The dairy buys camel, cow and goat milk from semi-nomadic livestock owners and processes the fresh milk into various market products, including pasteurised milk, sour milk, cream, yoghurt and cottage cheese.

Mauritania is located on the West African coast. Although it covers a large surface area it is not very well known worldwide, maybe because it does not have a large population, or maybe because its nomadic people, although great travellers, came into contact with the western world only recently.

Tiviski is the local name for a pleasant season which could be compared to spring. It extends from February to April, after the cold and before the intense summer heat.
Tiviski is also the name of the dairy's first product in 1989: pasteurised camel milk.
